Vegan Shephards Pie

Ingredients:

  • 1/2 onion
  • 4 tbsp olive oil
  • 2 lb potatoes
  • 3 tbsp margarine
  • 2/3 cup carrot
  • 2/3 cup peas
  • 2/3 cup green beans
  • 2/3 cup corn
  • 2/3 cup mushroom
  • 1 tsp rosemary

Directions:

  1. Cook veggies in pan with oil
  2. Boil and mash potatoes with margarine
  3. In casserole dish, spread veggies, and layer potatoes on top
  4. Enjoy
