Ingredients:

  • 2 cups celery
  • 1 cup leeks
  • 1 cup onions
  • 1/2 cup sweet peppers
  • 1 1/2 cups cabbage
  • 1/3 cup string beans
  • 1/8 cup mushrooms
  • 1/8 cup corn
  • 2 cups barley
  • 1 cup carrots
  • 2 cups water

Directions:

  1. Prepare barley one day ahead by soaking.
  2. Cut up vegetable into bite size pieces.
  3. Mix barley and vegetable with
  4. 1/4 tsp dill weed
  5. 1/4 tsp fennel
  6. 1/4 tsp oregano
  7. 1/4 tsp thyme
  8. Bring to a boil then simmer for 2 hours.
