Upside-down Banana-walnut French Toast

Ingredients:

  • 1 1/2 cups packed light brown sugar
  • 1/2 cup melted butter
  • 1/4 cup corn syrup
  • 3 medium bananas sliced
  • 1 loaf of cinnamon bread unfrosted.
  • 6 eggs
  • 1 1/2 cups milk
  • 1 tsp vanilla

Directions:

  1. Spray bottom of 13x9 glass baking sick with Pam or grease with shortening.
  2. In a large bowl, stir together brown sugar, butter, corn syrup, and walnuts until smooth then gently stir in bananas and pour into baking dish.
  3. Reserve the heels of the bread for another use. Arrange 2 layers of bread in banana mixture, cutting bread to fit if needed.
  4. In a medium bowl beat eggs and milk and vanilla then pour over the bread. Cover tightly and refrigerate at least 1 hour (best overnight) but no longer than 24 hours.
  5. Heat oven to 325 and bake uncovered for 45 to 55 minutes or until knife inserted in center comes out clean. Serve each serving upside down and spooning mixture over top.
