Ultimate Tapioca Pudding!

Ingredients:

  • 4 tbsp sugar
  • 1 cup milk
  • 5 tbsp sugar
  • 6 tbsp tapioca ( minute)
  • 1/4 tsp salt
  • 5 tbsp sugar
  • 1 tsp vanilla
  • 1 (15 oz) can peaches

Directions:

  1. Beat egg whites with 4 T sugar until stiff and set aside.
  2. Mix egg yolks in sauce pan with 1 cup milk until well blended.
  3. Add tapioca, salt, remaining sugar and remaining milk. Cook over med/low heat stirring constantly until full boil is reached. Boil must remain while still stirring.
  4. Remove from heat and add vanilla.
  5. Pour a small amount of the tapioca into the egg whites and fold together. Gradually add the rest.
  6. May be placed in dessert cups to cool. Place Saran Wrap over bowl, touching the entire surface of the pudding to prevent skim top.
  7. Top with canned peaches.
