Two Crust Pineapple Pie

Ingredients:

  • 1 (15 1/4oz) can crushed pineapple
  • 3/4 cup sugar
  • 2 &1/2 tbsp cornstarch
  • 3 tbsp butter
  • 2 tsp lemon rind

Directions:

  1. Make you Pie Crust:
  2. Note: I have a few Pie Crust recipes on my site
  3. Drain Pineapple,reserving 1/2 cup pineapple juice
  4. Combine sugar and cornstarch in a saucepan,stir well
  5. Add reserve pineapple juice
  6. Cook over Medium heat,stirring constantly,until thickened
  7. Remove from heat
  8. Add Pineapple,butter,lemon juice and rind
  9. Stir until butter melts
  10. Pour into pastry-lined pie plate
  11. Cover with top crust
  12. Slit in several places to allow steam to escape(or) use a Pie Bird
  13. Seal and flute edges
  14. Bake at 425 degree oven for 20 to 30 minutes
