Twice Baked Sweet Potatoes With Canadian Bacon

Ingredients:

  • 8 sweet potatoes (about 4 lbs)
  • 1/2 cup packed light brown sugar
  • 4 slices bacon , canadian or regular
  • 1 egg
  • 1/2 tsp salt
  • 1/2 tsp chipolte chili pepper

Directions:

  1. Preheat oven to 350'. Line 2 baking sheets with foil. Arrange potatoes on 1 baking sheet. Bake till very tender,about 1 hour;let stand until cool enough to handle,30 mins
  2. Meanwhile,place rack on remaining baking sheet. Spread 1/4 c brown sugar on a plate. Coat both sides of each bacon slice in sugar and arrange bacon slices on rack. Bake till crisp.,15-18 mins. Remove from rack,cool and chop.
  3. Coat 2 qt. Baking or souffle dish with spray. Remove potato flesh from skins. On med. speed,beat potatoes,egg,butter,cinnamon,salt,chipolte pepper and remaining 1/4 c brown sugar until blended;transfer to baking dish. Beat until heated through,30 mins. Serve sprinkled with bacon.
