Turkey-Noodle Soup

Ingredients:

  • 1 turkey carcass containing about 1 1/2 lb leftover turkey
  • 2 tsp salt
  • 1/2 tsp pepper
  • 1 sprig fresh thyme
  • 3 quarts water

Directions:

  1. Combine first 6 ingredients in a large stock pot; bring to a boil. Reduce heat; cover and simmer 2 hours or until meat falls off the bones.
  2. Remove bones and meat from broth; discard bones. Coarsely chop meat; return to broth.
  3. Bring broth to a boil; reduce heat. Drop noodles into simmering soup. Cook, uncovered., 10 minutes or until noodles are tender.
  4. Ladle soup and noodles into individual serving bowls; serve warm.
