Turkey Noodle Soup

Ingredients:

  • 3/4 cup. frozen peas
  • 1 cup. frozen corn or 1 can corn
  • 1 cup. carrots
  • 3/4 cup. diced onion
  • 1 tbsp. salt
  • 3/4 tsp. pepper
  • 1/2 tsp. dried marjoram
  • 1/2 tsp. dried thyme
  • 1/2 tsp. dried basil
  • 1/2 tsp. dried parsley
  • 1 cup. uncooked rice or
  • as much left over turkey as possible

Directions:

  1. Remove as meat from left over turkey as possible and set a side.
  2. Place turkey bones (with some meat, and andy left over giblets, etc.) in water in a large kettle.
  3. Bring to a boil.
  4. Reduce heat;cover and simmer for 1-2 hours.
  5. Strain, reserving the broth and throwing out the rest.
  6. To the broth, add the spices, (bouillon if desired), carrots, celery and onion; simmer for 30 minutes.
  7. Add Peas, Corn, Rice or Noodles and reserved Turkey Meat; Simmer uncovered until Rice or Noodles are tender. (Do Not Over Cook The Noodles or Rice)
  8. *May adjust Spices to taste.
