Tuna Empanadas

Ingredients:

  • 2 cups flour
  • 1 1/2 tsp salt
  • 1 egg
  • 1 (6 oz) can tuna
  • 1 medium onion, sliced
  • 1 medium tomato, sliced
  • oil (for deep frying)

Directions:

  1. Combine flour, baking powder and 1 teaspoons salt with egg in large bowl, mixing well.
  2. Add enough water to make stiff dough.
  3. Shape inot 3-inch balls.
  4. Flatten into 6-inch balls.
  5. Combine tuna, onion, tomato, jalapeno, remaining 1/2 teaspoons salt and pepper in bowl; mix well.
  6. Spoon 2 T. tuna mixture on each circle.
  7. Fold over to enclose filling; seal edges with fork.
  8. Deep-fry until golden brown.
