Ingredients:

Directions:

  1. In a large sauce pan, add olive oil and heat it on high. Add the sliced sausage and cook until well browned. Make sure to stir often or tends to burn.
  2. Once browned, remove from pot and set aside.
  3. Heat the olive oil over med-hi heat. Add the diced onion and peppers. Add a pinch of salt and simmer until onions until well softened.
  4. Add garlic and mushrooms and cook until garlic just starts to brown.
  5. Add diced tomatoes and lower heat to med-low heat and cover. Let simmer for 10 – 15 minutes.
  6. Remove cover and add tomato sauce herbs, crushed pepper, and cooked sausage.
  7. Cover and cook on low to med-low heat for at least 20 minutes stirring from time to time. The longer it cooks, the better it tastes.
