Ingredients:

  • 1 lb-2lb tomatoes , (or 1 tin of chopped toms)
  • 1 stick celery
  • 2 tbsp olive iol
  • 1 tbsp tomato puree
  • a jug of stock, (veg or chicken, either is fine)
  • i like to add a tsp of cumin and galam masala (optional)

Directions:

  1. Peel and dice the veg
  2. Fry in a pan in the oil
  3. When soft add tomato puree and fry for a few minutes (if using, add the spices at this stage)
  4. Add the stock and tomatoes add salt n pepper and sugar and simmer for 20 minutes
  5. Put in a blender and blend
  6. Put back in pan and warm
  7. Can be eaten like this for a rustic soup or can be put through a sieve
  8. Serve with crusty bread
