Tomato Broccoli Chicken

Ingredients:

Directions:

  1. Pound chicken breasts to about 1/2 thickness.
  2. Spray both sides of chicken with cooking spray; dredge chicken in breadcrumbs.
  3. Add chicken to nonstick skillet, coated with cooking spray, over medium-high heat.
  4. Cook chicken about 5 minutes (until well browned), then turn.
  5. Cook chicken for about 2 more minutes, remove and reduce heat to medium.
  6. Add wine to skillet, then return chicken (on less cooked side) and add broccoli and tomatoes. Cover pan.
  7. Simmer for about 6-8 minutes or until broccoli is tender.
  8. Top with cheese, cover and simmer until cheese is melted.
