Ingredients:

  • 1/2 cup butter
  • 6 tbsp brown sugar
  • 6 tbsp sugar
  • 1/2 tsp vanilla
  • 1 egg
  • 1 cup flour
  • 2 tbsp flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup brown sugar
  • 1 egg
  • 1/8 tsp salt
  • 1/2 cup chopped walnuts or 1/2 cup pecans
  • 1/2 cup coconut (optional)
  • 1/2 tsp vanilla

Directions:

  1. Mix batter ingredients until well mixed and thick.
  2. Spoon batter into paper lined tins dividing evenly between 12 tins.
  3. Bake at 375F degrees for about 15 minutes or until golden.
  4. While that is baking, mix all filling ingredients together.
  5. Remove from the oven and spoon about 1 Tbs. filling into each cup equally.
  6. Bake again for about 15 minutes.
  7. Let cool then enjoy.
