Three Layered Mint Sticks

Ingredients:

  • 1/2 cup butter
  • 1 cup sugar
  • 1 dash salt
  • 1/2 tsp peppermint extract
  • 1/2 cup flour
  • 1/2 tsp baking soda
  • 1/2 cup chopped walnuts or 1/2 cup pecans (optional)
  • 1 cup confectioners' sugar
  • 1 tbsp cream
  • 1/2 tsp peppermint extract
  • 1 tbsp butter

Directions:

  1. Preheat oven to 350 degrees F.
  2. Grease 9 in.
  3. Square pan.
  4. Bottom layer: Melt chocolate and butter.
  5. Beat eggs until frothy and stir in sugar, chocolate mixture and extract.
  6. Add salt, flour and nuts.
  7. Mix well and pour into 9 pan.
  8. Bake for 25 minutes.
  9. Cool.
  10. Filling: Mix ingredient until fluffy and spread on cooled cake layer.
  11. Let cool until firm.
  12. Topping: Melt and drizzle over the firm filling.
  13. Cool in the refrigeratoe for 15 minutes.
  14. Using a knife dipped in hot water, cut into strips.
