Ingredients:

  • 2 large onions
  • 2 tbsp olive oil
  • 3 cloves garlic
  • 1/2 tsp thyme
  • 1/2 tsp oregano
  • 2 tsp basil
  • 1/4 tsp salt
  • 1/4 tsp pepper

Directions:

  1. Cut eggplant into cubes. Place cubes in colander sprinkle with salt and place plate on top. let drain 30 minutes.
  2. Heat oil on fryingpan. add onions, green and red peppers and saute. Add garlic and tomatoes.. Transfer to bowl.
  3. Saute zucchini and eggplant.
  4. Heat all in wok.
