Ingredients:

Directions:

  1. Wash and drain lentils (can use other dried beans but you'll have to cook the mixture at least 3 hours)
  2. Chop all vegetables in small dice
  3. Saute in olive oil until tender
  4. Add bay leaves & lentils & continue to saute
  5. Mix in seasonings and salsa
  6. Add broth and box of frozen spinach or squash
  7. Add parmeson rind (optional)
  8. Let cook for at least 1 1/2 hours until everything is tender.
