The Beaver Club's Famous Banana Bread

Ingredients:

  • makes 2 loaves
  • 1 lb (about 4) very ripe bananas
  • 2 1/4 cups sugar
  • 7 tsp baking soda (i am not kidding 7tsp. is correct!!!)
  • 1/4 tsp salt
  • 4 eggs
  • 3 1/4 cups flour
  • 1 cup buttermilk (you can sour normal milk with either vinegar or lemon juice)
  • 1/2 cup vegetable oil

Directions:

  1. Preheat oven to 275F and set the rack in the middle of the oven. Butter and flour 2- 8”X4” loaf pans.
  2. Combine the bananas, sugar, baking soda, and salt, and mix at high speed in a blender for one minute. Pour mixture into a bowl Then mix in the eggs one at a time. Mix in the flour alternately with the buttermilk and oil, and beat the mixture for two minutes or until smooth. Pour the batter into the prepared pans and bake for 2 1/2 hours.
  3. *Note: For a rich banana flavour, be sure to use very ripe bananas and bake for the full 2 1/2 hours. This banana bread improves with age and can keep for several days wrapped in plastic wrap at room temperate. It also freezes very well. Also this bread will become quite dark this is normal because of the cooking time and the very dark bananas.
