NOT! Your average banana bread!!! I never thought about Kings, Queens, Presidents, Prime Ministers, Heads Of States and other Dignitaries eating banana bread! This Banana bread recipe is from The Famous Fairmont Queen Elizabeth Hotel Of World acclaim for their culinary skills. Read more . I have been making this since 1960' when I was given the recipe at my bridal shower. Unbeknownst to me until recently, I did not know I had been probably making The Best Banana Bread for years! Just follow the directions carefully. It gets better with age too! Just half the ingredients for 1 loaf but I usually make 2 as it freezes well. LOL They probably charge a bundle or big bucks for 1 slice! It would be well worth it though:-) Enjoy!
Ingredients:
makes 2 loaves
1 pound (about 4) very ripe bananas
2 1/4 cups sugar
7 teaspoons baking soda (i am not kidding 7tsp. is correct!!!)
1/4 teaspoon salt
4 eggs
3 1/4 cups flour
1 cup buttermilk (you can sour normal milk with either vinegar or lemon juice)
1/2 cup vegetable oil
Directions:
1. Preheat oven to 275F and set the rack in the middle of the oven. Butter and flour 2- 8”X4” loaf pans.
2. Combine the bananas, sugar, baking soda, and salt, and mix at high speed in a blender for one minute. Pour mixture into a bowl Then mix in the eggs one at a time. Mix in the flour alternately with the buttermilk and oil, and beat the mixture for two minutes or until smooth. Pour the batter into the prepared pans and bake for 2 1/2 hours.
3. *Note: For a rich banana flavour, be sure to use very ripe bananas and bake for the full 2 1/2 hours. This banana bread improves with age and can keep for several days wrapped in plastic wrap at room temperate. It also freezes very well. Also this bread will become quite dark this is normal because of the cooking time and the very dark bananas.
