Ingredients:

Directions:

  1. Preheat broiler or grill.
  2. In a bowl whisk lime juice and zest along with tequila mint and ginger.
  3. Rinse scallops and pat dry.
  4. Place in a plastic bag you can seal (Ziplock type).
  5. Pour marinade over and seal.
  6. Marinate 10-20 minutes.
  7. Divide scallops equally on skewers.
  8. Broil or grill 2 minutes; turn brush with marinade and then broil or grill 1 1/2 minutes more.
  9. Serve over rice, a Greek salad or pasta.
