Tangy Sweet Potato Salad

Ingredients:

Directions:

  1. Place potato slices in vegetable steamer.
  2. Place steamer over 2-inches of water in large pot.
  3. Cover pot. Bring to a boil on high heat.
  4. Steam potatoes 10 to 15 minutes, or until tender when pierced with knife.
  5. Remove steamer from pan.
  6. Peel potatoes when cool enough to handle (about 10 minutes).
  7. Place potatoes in mixing bowl.
  8. Combine vinegar, pickle relish, mustard, salt, and pepper in jar with tight-fitting lid.
  9. Shake well.
  10. Add vegetable oil.
  11. Shake well again.
  12. Toss warm potatoes with dressing.
  13. Add scallions and red pepper, if used.
  14. Serve at room temperature or chilled.
  15. If you don't have a steamer boil for 10 to 15 minutes
