Tahini Bread Tahinli Ekmek

Ingredients:

  • 2 tsp yeast
  • 1/8 cup warm water
  • 2 tbsp sugar
  • 3 tbsp butter
  • 3 cups flour
  • 1 cup tahini
  • 1 cup sugar
  • 3 tbsp sesame seeds

Directions:

  1. Proof yeast in 1/8 cup warm water (I add 1 Tablespoon honey).
  2. Add sugar, scalded milk, and butter.
  3. Add flour; knead 5 minutes.
  4. Let rise until doubled; punch down; cut into 5 equal pieces.
  5. Roll out each piece until they are a thin round shape.
  6. While dough is rising, make filling by mixing tahini and sugar together.
  7. Spread the filling on each round equally.
  8. Roll up jelly-roll style.
  9. Let rest, covered with a damp cloth, for 30 minutes.
  10. Hold them at both ends of the roll and swing them to make them longer and thinner (That's what the recipe says.).
  11. Wrap them like a cinnamon roll.
  12. Place parchment paper on an oven tray; arrange dough on it.
  13. Brush with egg wash; sprinkle with sesame seeds.
  14. Let rest 10 more minutes (I am guessing until doubled).
  15. Preheat oven to 400 degrees Fahrenheit.
  16. Bake for 30 minutes.
