Ingredients:

  • 1 cup of groats. (you can use couscous or quinoa as well)
  • 1 package of parsley. (it might seem like a lot but it's not).
  • 1 package of mint leaves
  • 2 medium tomatoes
  • 2 tsp salt

Directions:

  1. Pour Groats into a bowl and cover with boiling water .
  2. Let stand for about 1/2 hr to enable Groats to absorb water
  3. Finely chop Tomatoes and Parsley and Mint
  4. Pour off excess water from Groats.
  5. Mix all ingredients together.
  6. Let all the tastes blend for at least an hour before serving.
  7. Serve chilled
