  1. Soak the bulgur wheat in enough water to cover for 30 minutes. Meanwhile finel chop the tomatoes, the parsley and mint and the green onions ( tender green and white parts). Drain the wheat and mix in a large bowl with the rest of the ingredients. Let rest in the refrigerator so the flavor develops. Serve with the lettuce leaves.
