Directions:

  1. In large saute pan,heat olive oil over med-high heat. Add the onions,season with salt and cook 2-3 mins,stirring to avoid burning
  2. Add zucchini,herbes de Provence and salt and pepper.to taste and cook additional 5 mins,usung wooden spoon or spatula to avoid overbrowning. Reduce heat to low,add a little more oil if needed and let cook 20-30 mins,stirring occasionally.
  3. Once it's done,you can turn off the heat and let it sit stovetop or just let it cook some more over very low heat. The dish is very flexible.
