Sweet Potato Home Fries

Ingredients:

Directions:

  1. Preheat oven to 350
  2. Mince garlic
  3. Chop green onion
  4. Chop bell pepper into bite size pieces
  5. Quarter sweet potatoes and then slice about 1/8 inch thick
  6. Mince parsley or cilantro
  7. Chop deli ham into small pieces
  8. Heat oil in a nonstick skillet over medium-high heat
  9. Add deli ham and allow to crisp up a bit
  10. Add garlic , bell pepper and sweet potatoes
  11. Season with a springling of garlic salt, pepper and paprika (try to do a thin layer where each potato has a little season, not to heavy as you will season one more time after turning)
  12. Allow to cook with a lid on until bottom side is crisp, about 10 or 15 minutes
  13. Flip potoatoes and break up a little, adding in green onions and one more thin layer of seasonings
  14. Cook for another 10-15 minutes until crisp on bottom
  15. Flip and break up potatoes , add parsley and mix through
  16. Sprinkle with parmesan cheese and put in oven about 10 minutes until cheese is melted and potatoes are crispy outside and tender inside
