Sweet Potato Casserole

Ingredients:

  • 4 to 5 medium sweet potatoes
  • 3/4 stick of butter
  • 2 medium eggs
  • 1 tsp vanilla
  • 1/4 tsp salt

Directions:

  1. Peel and boil potatoes until tender. Mash sweet potatoes until smooth. Add remaining ingredients, mix and pour into a 9x13 baking dish.
  2. Topping: 1 cup brown sugar, 2 tablespoons flour, 2 tablespoons butter at room temperature, 1/2 cup pecan pieces.
  3. Mix well and crumble over sweet potato mixture. Bake 40-50 minutes at 350.
