Sweet And Fragrant Honey Cake Loaves

Ingredients:

Directions:

  1. Preheat oven to 300 degrees.
  2. Grease and flour 2 9x5 inch loaf pans or one 9x13 pan. ( I used 2, 8 x 4 pans and batter filled each slightly over 1/2 full )
  3. I also lined pans with waxed paper so raisins would not stick to pan
  4. Set aside.
  5. In a saucepan, combine the honey and coffee and bring to a boil.
  6. Cool and set aside.
  7. In a large mixing bowl, blend the eggs, brown sugar and oil.
  8. Do not over-beat.
  9. Sift the flour, baking powder and baking soda and spices together.
  10. Stir the flour and honey into the eggs alternating and ending with the liquid.
  11. Stir in the raisins.
  12. Blend well.
  13. Pour into the prepared pans and place the almonds over the cake.
  14. Bake for 60-70 minutes, or until the cake springs back.
  15. Let sit overnight before serving.
  16. Note: these freeze well also
