Ingredients:

  1. In a medium saucepan, bring 2/3 cups water to a boil.
  2. Add rice and stir once or twice.
  3. Reduce heat and simmer, covered for 20 minutes. Keep warm.
  4. In a small bowl, mix the rice vinegar, sugar ,and salt until dissolved.
  5. Transfer rice to a bowl, and using a (preferably wooden) spoon, blend the mixture into the rice.
  6. Place a sheet of nori on a bamboo rolling mat.
  7. Using wet hands, spread half the rice in a thin layer, leaving about 1 space on the sheet facing you.
  8. Arrange half the cucumber and surimi along the edge of the nori, on top of the rice.
  9. Lift the end of the mat, and gently roll it over the ingredients, pressing gently.
  10. Roll it forward to make a complete roll. Transfer to a cutting board, and repeat with remaining ingredients.
  11. Wet a sharp knife (the sharpest you have!) and slice each roll into 6 pieces.
  12. Serve with wasabi, shoyu and gari if desired.
