Ingredients:

  • 11/2 cup very ripened bananas (mashed)
  • 3 cup flour
  • 11/2 tsp baking soda
  • 1/4 tsp salt
  • 2 1/8 cup sugar
  • 2 tsp vanilla
  • 1 1/2 cup buttermilk

Directions:

  1. Mash up bananas with a fork and mix in lemon juice and set aside.
  2. In medium bowl sift together flour, baking soda and salt, set aside.
  3. In a large bowl cream butter and sugar until fluffy.
  4. Add in eggs one at a time and the vanilla.
  5. Beat in the flour mixture alternating it with the buttermilk.
  6. Stir in the Banana mixture just until blended.
  7. Pour batter into greased and floured loaf pans and bake 45-60min.
  8. Take out and move into a freezer for 20-30 min.
