Buttermilk Chocolate Cake

Ingredients:

  • 1 cup hot water
  • 1/2 cup cocoa
  • 2 1/2 cups flour
  • 1/2 tsp salt
  • 2 cups sugar
  • 2 large eggs
  • 1 tsp vanilla
  • 1 cup buttermilk
  • 2 1/2 cups powdered sugar
  • 1 1/2 tsp vanilla
  • 3 -5 tbsp milk

Directions:

  1. In a small bowl, combine hot water and cocoa.
  2. Mix until smooth; set aside.
  3. In a medium bowl, combine flour, baking soda and salt.
  4. Set aside.
  5. In a large mixing bowl, cream butter and sugar.
  6. Add eggs one at a time, beating well after each addition.
  7. Stir in vanilla and buttermilk.
  8. Add cocoa mixture and combine.
  9. Gradually add flour mixture, mixing just until smooth.
  10. Pour into prepared pan.
  11. Bake at 350 degrees for 30 to 40 minutes, or until a toothpick inserted in center comes out clean.
  12. Cool completely.
  13. Frost with Peanut Butter Frosting.
  14. Peanut Butter Frosting:
  15. In a medium bowl, mix powdered sugar, vanilla and peanut butter.
  16. Gradually add milk, beat until smooth and creamy.
