Ingredients:

Directions:

  1. ::For the sake of being a little more specific, I will be using a leg quarter, chicken flavored rice, and frozen broccoli::
  2. Preheat oven to 425 degrees.
  3. In a flat bottom casserole dish, mix the rice, seasoning packet and water. Stir until mixed.
  4. Rinse and pat dry chicken. Lay on top of the rice mixture.
  5. Season chicken to taste. I usually use freshly ground sea salt, garlic, chicken seasoning, and lemon pepper.
  6. Cover and bake for 45min.
  7. Add broccoli (and cheddar; optional), mix slightly.
  8. Return to oven and continue baking for 10-15 min or until chicken is cooked through.
  9. You may leave the cover off for 5 minutes or so to let the chicken brown on top.
  10. Cut the quarter in half and serve with rice.
  11. Enjoy!
