Sun-Dried Tomato Vinaigrette

Ingredients:

  • 3 -4 garlic cloves
  • 1 bunch fresh basil
  • 1 pinch salt
  • 1 pinch pepper
  • 2 tbsp olive oil

Directions:

  1. Cut tomatoes into thin slices.
  2. Lay out slices on a cookie sheet.
  3. Sprinkle garlic over top of all the tomatoes.
  4. Place a leaf of basil on each slice of tomato.
  5. Set in sun for 2 to 3 hours or until almost dry.
  6. Place the tomato slices in a blender and puree until smooth; add some olive oil and mix together.
