Stuffed Green Peppers

Ingredients:

  • 1/2 onion
  • 1 1/5 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp garlic
  • 32 oz ragu

Directions:

  1. Brown ground turkey and onion together.
  2. Follow directions for rice on package.
  3. After turkey is browned at about 1 tablespoon of garlic, and the spaghetti sauce of your choosing. We prefer the Chunky Ragus. Finnally, put about half a cup of shredded mozzerella in and mix. Allow to simmer for about 10 minutes.
  4. During this 10 minutes, cut green peppers in half, removing the inside, and then put them in a pot fill with enough water to just cover the green peppers. Boil for about 10 minutes. These way you get the great green pepper taste without the super crunchy texture.
  5. Set oven to 350 degrees.
  6. When peppers are done, stuff with the mixture and bake for about 30 minutes. After 30 minutes remove and sprinkle the remainder of the mozzerella on each green pepper, and place back in the oven for about 7 - 10 minutes.
  7. Remove and enjoy.
  8. Many variations can be made to this recipe, but I find that even those who don'e like stuffed green peppers, love this version.
