Strawberry Rice Krispies Date Cookies (Xmas)

Ingredients:

  • 1 cup butter
  • 1 cup sugar
  • 1 1/2 cup dates chopped
  • 1 egg
  • 1 tsp vanilla
  • 1 1/2 cup pecans chopped
  • 1/4 cup red sugar
  • 1/8 cup almond slivers dyed green

Directions:

  1. Melt butter, add sugar and stir until dissolved. Add dates, cook until dates, sugar and butter are well mixed. Add beaten egg, cook about 5 minutes; add vanilla. Pour over Rice Krispies and add pecans. Cool, roll into balls, roll balls in coconut. Add 1 cup white syrup if raisins are used.
  2. Roll in red sugar, forming a conical (strawberry) form, and top with a sliver of almond that's been dyed with green food dye.
