Ingredients:

Directions:

  1. Combine gelatin and water in top of a double boiler; let stand 5 minutes or until softened. Cook over boiling water, stirring constantly, 1 minute or until gelatin dissolves. Remove from heat, and set aside to cool.
  2. Combine mashed strawberries and sugar in a large mixing bowl. Add dissolved gelatin; mix well. Chill until consistency of unbeaten egg white.
  3. Beat mixture until frothy and light pink in color. Fold in whipped cream, and pour into a lightly oiled 6-cup mold. Chill until firm. Unmold onto a serving plate, and garnish with sliced strawberries, if desired. Spoon into individual serving bowls to serve.
