Ingredients:

Directions:

  1. Mix cornstarch and 1/4 c water, set aside.
  2. Bring stock and remaining water to a boil in a saucepan.
  3. Reduce heat and add zest, salt, pepper and lemon juice.
  4. Whisk in cornstarch mixture and stir 2-3 minutes, simmering.
  5. Add egg in a slow stream, stirring with a spoon.
  6. Add spinach return to boil, remove from heat.
  7. Serve with grated parmesan cheese as a garnish.
