Ingredients:

Directions:

  1. Clean fish and wipe dry.
  2. Rub fish with salt and sherry (inside and outside); place on a large platter.
  3. Mash salted black beans with sesame oil and soy sauce.
  4. Spread mixture over fish.
  5. Arrange green onions, shredded ginger and mushroom strips on top of fish.
  6. Place platter on top of rack in steamer.
  7. Steam fish for 18-20 minutes.
  8. Serve hot as part of a chinese meal.
  9. Note: dried mushrooms are soaked in boiling water for 20 minutes, squeezed dry, stems removed and sliced.
