Steamed Clams in Onion Broth

Ingredients:

Directions:

  1. In a large pot over medium heat, cook the onions in the butter until soft.
  2. Stir in water and parsley.
  3. Cover pot and bring to a boil.
  4. Add the clams.
  5. Cover and steam them until shells open, 5 to 8 minutes.
  6. Discard any unopened clams.
  7. With a slotted spoon, transfer the clams to a serving bowls.
  8. Strain the broth from the pot through an unbleached coffee filter into 6 individual bowls.
  9. Serve the broth for dipping the clams.
