Steak with Puttanesca Sauce & Brown Rice

  1. Mince half the garlic and chop olives, set aside. Spray a nonstick saucepan with cooking spray; on medium heat, sauté garlic lightly, about 1 minute. Add tomato sauce, olives and spices, cover and bring to a boil. Reduce heat and simmer until sauce has reduced to a consistency of your choice. Rub steak with remaining half clove of garlic. Spray nonstick skillet with cooking spray and heat on medium-high. Add steak and cook about 2-3 minutes on each side or until desired degree of doneness. Place steak over rice pour sauce on top and serve.

  4. 2 tbsp. brown rice
  5. Place rice in a small pot with tight-fitting lid and cover with about 2 1/2 times the amount of water (for example if you're cooking 4 tablespoons of rice, use 10 tablespoons of water...about 3/4 cup water). Bring to a boil, uncovered, on high heat; reduce heat to low, cover tightly and cook for about 40-45 minutes, or until water is absorbed and rice is tender.
