St Pattys Mint Cheesecake Bars

Ingredients:

  1. Heat over to 325 degrees. In a large bowl, beat cake mix and butter with electic mixer on low speed until crumbly; reserve 1 cup. In bottom of ungreased 13x9-inch pan, press remaining crumb mixture. Bake for 10 minutes. Remove from oven, cool slightly.
  2. In the same bowl, beat cream cheese and frosting with electric mixer on medium speed until smooth. Add in eggs, one at a time, until blended. Add 6-8 drops of green food coloring, or more depending on how dark you want the batter. Mix well. Then add 3-4 drops of candy flavoring, mix well and taste to adjust if more is needed to your preference. Pour over crust; sprinkle with reserved crumb mixture. Top with 1 cup of Toll House Morsels, reserving the rest of the bag for finishing touches.
  3. Bake about 45 minutes(about 42 mintues for dark or non-stick pan) or until set. Cool completely. Cover and refrigerate at least 2 hours or until chilled. Reserved morsels: In a small microwaveable bowl, add morsels and heat in microwave in 45 second intervals, stirring until completely melted and smooth. Place melted chocolate into a ziploc bag and clip a small corner, then drizzle over cooled bars.
  4. For bars, cut into 6 rows by 6 rows. Store in refrigerator. Enjoy.
