Ingredients:

Directions:

  1. Melt butter or margarine or heat oil
  2. Sautee onions until translucent
  3. Add potatoes and curry
  4. Sautee for about 5 minutes
  5. Add spinach and cook until moist and reduced in size
  6. Add broth and bring to boil
  7. Lower heat and simmer for about half an hour (will take more or less time depending on size of potatoes)
  8. Puree soup in blender or food processor
  9. Serve garnished with sour cream, plain yogurt, or sprinkled with parmesan or gruyere cheese.
