  1. Whisk 1/4 cup olive oil with 1 1/2 tablespoons lemon juice, 1/4 cup finely chopped mint, sugar, pepper and salt.
  2. Combine spinach with the grapefruit and green onion. Toss with poppy seed dressing, and chopped mint mixture.
