  1. Preheat oven to 400
  2. Heat the oil in a large skillet over medium-high heat. Add garlic; cook until golden ( about 30 seconds), stirring constantly. Add cumin and red pepper. Add potatoes and salt; toss well. Place potato mixture in a roasting pan coated with cooking spray. Bake at 400 for 25 minutes or until tender.
