Directions:

  1. In large saucepan combine the zucchini, beef broth, salsa and water.
  2. Bring to a boil.
  3. Reduce Heat; simmer; 3 to 5 minutes or until Zucchini is crisp tender.
  4. Stir in meatballs and cilantro and heat through.
  5. Top with Corn chips if desired.
