Spiced Sweet Potato Mini-loaves

Ingredients:

Directions:

  1. Preheat oven to 325*F
  2. In a large saucepan, combine sweet potatoes, brown sugar, apple juice, raisins, oil, cinnamon, nutmeg, cloves and allspice.
  3. Bring to a boil over high heat.
  4. Lower heat and simmer for 2 minutes.
  5. Set aside to cool.
  6. Sift together flour, soda and baking powder.
  7. Add to the cooled sweet potato mixture; stir well.
  8. Fold in walnuts.
  9. Spoon batter into 3 greased mini (approximately 3 x 6-inch) loaf pans.
  10. Bake on lowest rack in 325*F oven for 60 minutes or until a wooden pick inserted into center comes out clean.
  11. Cool in pans for 10 minutes then turn out and transfer loaves to wire rack to cool completely.
  12. Makes 3 mini loaves or 18 servings
  13. You can also make these loaves even healthier by adding 1/2 cup of cranberries to your batter. Cranberries and sweet potatoes go very well together! :+D
