Spiced Apricot Mold

Ingredients:

  • 16 oz can apricot halves drained reserve 3/4 cup liquid
  • 1/4 cup water
  • 3 oz package orange gelatin
  • 2 tbsp lemon juice
  • 2 whole cloves
  • 1/4 tsp cinnamon

Directions:

  1. Lightly oil a 1 quart mold then chop apricots and arrange evenly in bottom of prepared mold.
  2. In small saucepan combine reserved liquid and water then bring to a boil.
  3. Add gelatin and lemon juice then stir until gelatin is completely dissolved.
  4. Stir in cloves then blend yogurt and cinnamon and stir into gelatin mixture.
  5. Refrigerate mixture until syrupy then pour mixture over apricots in mold.
  6. Refrigerate 4 hours until firm then turn out onto serving platter.
