Spanish Black Beans and Rice

Ingredients:

  • 2 cups water
  • 1 tbsp olive oil
  • 1 (15 1/4 oz) can corn
  • 1 (15 oz) can black beans
  • 1/2 cup sour cream

Directions:

  1. Prepare Spanish rice according to package directions.
  2. Brown ground beef in a skillet and drain.
  3. When rice is cooked, add to the ground beef.
  4. Mix in remaining ingredients and simmer until heated through.
