Ingredients:

Directions:

  1. Heat oil in a large saucepan over medium-high heat.
  2. Add onion, cook 5 minutes, stirring occasionally.
  3. Stir in carrot, bell pepper, jalapeno and garlic and cook 4 minutes more.
  4. Add water, stock, lentils, tomatoes, and bay leaves.
  5. Bring to a boil over high heat.
  6. Reduce heat and simmer uncovered 18-20 minutes until the lentils and veggies are tender.
  7. If you prefer a heartier texture to your soup, let it simmer for another 20 minutes or so to cook off some of the liquid.
  8. Season to taste with the chili powder and a few twists of fresh ground pepper.
