Southern Fried Green Tomatoes With Shrimp and Tomato Relish

  1. It is best to make the relish first, to allow the flavours to marry.So combine the diced red tomato, onion, basil, 2 Tbsp olive oil, salt & pepper to taste.
  2. Dredge the green tomato slices in the seasoned flour. On med high, heat the oil in a heavy pan .Fry the tomato slices for approx 2 mins a side.Remove from pan and drain on paper towels.
  3. Season shrimp with salt & pepper. saute in a hot non stick pan for 2 minutes, Lower the heat to med and add the garlic and 1 Tbsp butter. Stir for 1 min and remove from heat.
  4. Place the tomato slices on plates, top with the mozzarella cheese, sauteed shrimp and the tomato relish. Drizzle some juice from the relish around the plate.
