Southern Comfort Crunch Pecans

Ingredients:

  • 2 cups pecan halves
  • 1 tsp salt
  • 1 tsp vanilla
  • 1 pinch cinnamon
  • 1 dash nutmeg
  • 4 tbsp brown sugar

Directions:

  1. Combine Southern Comfort, orange juice, vanilla, cinnamon and nutmeg.
  2. Spread pecans in a shallow dish.
  3. Sprinkle with salt.
  4. Pour liquid mixture over pecans stirring until all moistened.
  5. Marinate 1 hour, stirring occasionally.
  6. Sprinkle with 2 TBS brown sugar and stir til coated.
  7. Bake at 275 for 30-40 minutes stirring every 10 minutes.
  8. Add remaining brown sugar, stirring until coated.
  9. Bake additional 10-15 minutes, stirring every few minutes.
  10. Toward the end of cooking watch them carefully as they will scotch if overcooked.
  11. Test for doneness by cooking and tasting a couple of nuts.
  12. They should be crunchy not chewy.
  13. Cool on wax paper separating with a fork as they cool.
